How to Stop Being Afraid of Cooking

Cooking can feel intimidating when you don’t know where to start. Maybe you’ve burnt a few meals, struggled to follow recipes, or simply feel like everyone else somehow knows what they’re doing. But here’s the secret: you don’t need to be a great cook to start cooking. You just need to start.

1. Start With Simple Recipes

Don’t begin with a complicated three-course meal. Choose recipes with a handful of ingredients and straightforward steps.

Think:

  • Pasta dishes
  • One-pan chicken
  • Roasted vegetables
  • Simple soups
  • Easy desserts
  • Breakfast dishes

Once you successfully make a few simple meals, your confidence will naturally grow.

2. Read the Recipe Before You Start

One of the biggest beginner mistakes is starting to cook before reading the entire recipe.

Take two minutes to look through:

  • The ingredients
  • Cooking times
  • Oven temperatures
  • Equipment needed
  • The order of the steps

This prevents the dreaded “Wait… I was supposed to do that 20 minutes ago?” moment.

3. Prepare Everything First

Professional chefs call this mise en place, which essentially means having everything prepared and ready before you start cooking.

Measure your ingredients, chop your vegetables and get your equipment ready.

It makes cooking feel much less chaotic—and a lot more enjoyable.

4. Don’t Expect Perfection

Your first meal doesn’t have to look like it belongs on the cover of a food magazine.

Maybe your vegetables aren’t perfectly chopped. Maybe your sauce is slightly too thick. Maybe your cake isn’t perfectly even.

That’s okay.

Cooking is a skill, and skills improve through practice.

5. Learn to Trust Your Senses

Recipes give you instructions, but your eyes, nose and taste buds can also tell you a lot.

Learn to notice:

  • When onions become soft and golden
  • When meat develops a beautiful browned crust
  • When herbs become fragrant
  • When a sauce has thickened
  • When a cake is properly baked

The more you cook, the more you’ll recognise these little signs.

6. Don’t Be Afraid to Make Mistakes

Burnt something? You’ve learned what too hot looks like.

Added too much salt? You’ve learned to season gradually.

Forgot an ingredient? You’ve learned to read the recipe first!

Every mistake gives you information that makes the next attempt easier.

7. Keep Your First Meals Affordable

There’s no reason to spend a fortune while you’re learning.

Use ingredients you already know and enjoy. Chicken, potatoes, pasta, rice, seasonal vegetables and affordable cuts of meat can all become incredibly impressive dishes.

Affordable doesn’t have to mean boring.

8. Make Food You Actually Want to Eat

If you love pasta, learn to make a great pasta dish. If you have a sweet tooth, start with an easy dessert.

Cooking becomes much more exciting when you’re making something you’re genuinely looking forward to eating.

9. Give Yourself Permission to Experiment

Once you’re comfortable with a recipe, start making it your own.

Try:

  • Adding different herbs
  • Swapping vegetables
  • Adding a little spice
  • Changing the toppings
  • Trying a different sauce

This is where cooking starts becoming your cooking.

10. Remember: Confidence Comes After You Cook

You don’t have to feel confident before you start.

The confidence comes from doing it.

Your first meal might not be perfect. Your second might be better. By your tenth, you’ll probably wonder why you were ever so nervous.

And before long, you might find yourself saying:

“I can’t believe I actually made this!”

The Bottom Line

Cooking isn’t about being naturally talented. It’s about learning a few basic techniques, following simple recipes and giving yourself room to make mistakes.

So stop waiting until you feel like you can cook.

Pick a recipe. Get into the kitchen. Give it a try.

Because you might be a much better cook than you think.
